Keto/Low Carb Mini Deep Dish Pizzas

Happy (almost) New Year, friends. 2019 has been a rollercoaster and I hope it has been good to you. The new year brings many resolutions for diets and weight loss and let me tell you this – I cannot say enough positive things about the keto diet. I use it intermittently along with fasting, low carb eating, and working out to lost/maintain weight…and of course a little indulging every now and then. But at the start of 2019 I went hard with keto for about 2 months and I loved it. I plan on posting a lot more low carb and keto recipes very soon.

Oh, these messy little pizzas are AWESOME and they’re under 4 carbs per serving, too! We have made these a ton of times and whether I’m in hardcore keto mode or not, they always hit the spot. This recipe uses the same ingredients for the dough as I used for my whiskey meat pies. I use the dough recipe for so many meals, to be honest. It’s delicious and holds together so well. It also freezes great so if you’re looking for good keto meal planning recipes to make in bulk.

Keto/Low Carb Mini Deep Dish Pizzas

For our toppings I always use fresh mozzarella…and I usually eat half of it before it even gets placed on the pizza! For the pizzas in the photos, I found a really delicious fresh basil mozzarella ball at Stop & Shop. You can definitely use shredded or shred your own from a block. I use Rao’s Homemade Marinara for the sauce because it’s quick, easy, really tasty, and has 1 carb per 2 tablespoons. If you want to make your sauce at home, this recipe from I Breathe I’m Hungry and it’s great (plus it’s super easy to make)! Now when it comes to any other toppings, that’s all you. My favorite is classic, thick cut pepperoni!

Note: It seems no matter how much you grease the pan, these pizzas crumble just a little bit on their way out. It’s nothing you did wrong, it’s honestly the nature of keto recipes especially “bread”. Use a butter knife or a very small rubber spatula to loosen them from the muffin tin. Do your best. I’m sure some other hoity-toity, milk-your-own-cow, ew-you-use-jar marinara food bloggers would shudder at the realism here (don’t get it twisted, I got love for those blogs too) but I’m a real person trying to eat some bomb diet-friendly food just like you and I feel like you should absolutely know those things. These little guys will be messy and it’s 10/10 worth it!

Mini Deep Dish Pizzas (Keto)

  • Dough
  • 4 eggs

  • 1/2 tsp baking powder

  • 1/4 cup melted butter

  • 1/2 cup coconut flour

  • 1/2 cup shredded cheddar

  • Salt and pepper to taste

  • Toppings
  • Mozzarella

  • Marinara

  • Meat and/or veggies of choice


  • Preheat oven to 400 degrees. Grease muffin tin. This recipe will make enough for the standard 12 but I use a jumbo muffin tin that makes 6.
  • Mix all ingredients for dough and spoon into muffin tin and line with dough making a small “cup”.
  • Bake for 8 minutes so that the dough is almost but not completely cooked through.
  • Remove from oven and spoon marinara into cups then top with cheese and your choice of toppings.
  • Return to oven and bake for an additional 8-10 minutes.
