If you’re new to veganism or adding some plant-based meals to your weekly rotation, let me tell you this: vegan food freaking rocks. If you’ve been hardcore plant-based for years, you already know that. I’ve got a great breakfast/lunch/dinner lineup of delicious options for you guys to try!
Long story short: if you stalk me on Instagram, you probably know that I have been suffering from some particularly rough stomach issues lately. I’ll spare the grizzly details of what happened and treatment and just say that I have to be very selective about what I eat for a long time now. I mean very selective. No special low carb diet. No keto. No spicy food. No dairy. No alcohol. Pretty much only whatever I can eat and only little bites at a pass (I’m happy to at least be past the “only bananas and almond milk yogurt” stage). C’est la vie.
As someone who was a vegetarian for a long time, it’s not really a stretch for me to skip the cheese as well. It also doesn’t break my heart to give up meat. Mike and I already make several vegetarian/vegan staple meals at home so this is a super fun way for us to get creative in the kitchen and find different foods we can love together. Plus, the health benefits??? Um, yes, all of that. I wanted to share with you all some of my favorite vegan breakfast, lunch, and dinner recipes that we have tried!
